How To Make It
Cut chicken into chunks. Season with salt, pepper, paprika and garlic powder. Heat oil in a large pot over medium-high heat. Cook chicken 4–5 minutes until golden. Remove and set aside.
💡 Don’t skip the sear — it adds incredible flavour!In the same pot, add onion and carrots. Cook 3–4 minutes until soft. Add garlic and stir for 30 seconds. Your kitchen will smell amazing!
Add rice and stir to coat in all those lovely flavours. Pour in chicken stock and stir. Bring to a boil over high heat.
💡 No stock? Use water + 1 stock cube to save money!Return chicken to the pot. Reduce to low heat, cover with a lid, and cook 18–20 minutes. Do NOT lift the lid — the steam cooks the rice perfectly!
Remove from heat. Add frozen peas, replace lid, and rest 5 minutes. Fluff with a fork, taste for seasoning, and serve!
💡 Add a squeeze of lemon juice at the end for a fresh finish!🏆 My Best Tips
- Use chicken thighs not breasts — juicier and cheaper
- Don’t lift the lid while rice is cooking
- Rinse rice before cooking to prevent stickiness
- Leftovers keep in the fridge for 4 days
- Freeze in portions for up to 3 months
- Double the batch on Sunday for easy lunches all week
Easy Variations
Add ½ tsp cayenne and a diced chilli with the onions.
Stir in ½ cup cheddar before serving. Kids love this!
Add broccoli or spinach in the last 5 minutes.
Add lemon zest and fresh parsley before serving.
