How To Make It

Season & Sear the Chicken

Cut chicken into chunks. Season with salt, pepper, paprika and garlic powder. Heat oil in a large pot over medium-high heat. Cook chicken 4–5 minutes until golden. Remove and set aside.

💡 Don’t skip the sear — it adds incredible flavour!

Cook the Aromatics

In the same pot, add onion and carrots. Cook 3–4 minutes until soft. Add garlic and stir for 30 seconds. Your kitchen will smell amazing!

Add Rice & Stock

Add rice and stir to coat in all those lovely flavours. Pour in chicken stock and stir. Bring to a boil over high heat.

💡 No stock? Use water + 1 stock cube to save money!

Simmer Low & Slow

Return chicken to the pot. Reduce to low heat, cover with a lid, and cook 18–20 minutes. Do NOT lift the lid — the steam cooks the rice perfectly!

Add Peas & Rest

Remove from heat. Add frozen peas, replace lid, and rest 5 minutes. Fluff with a fork, taste for seasoning, and serve!

💡 Add a squeeze of lemon juice at the end for a fresh finish!
